Korean-Style Street Foods Heat Up in Colorado Springs | Table Talk

Korean-style spicy, crunchy street foods are having a moment in Colorado Springs.

For us it started in 2021, when Angry Chicken (super-spicy fried chicken with extra-crunchy breading) and 88 Hotdog (Korean-style corn dogs) caught our attention. Now, another trendy Korean-inspired eatery has joined the mix: Egg Lush, 1025 S. Sierra Madre St.

Thanks to food and lifestyle influencer Kim Piasecki (@platedforkim), we got the tip.

“There’s a new Korean breakfast place that just opened,” Piasecki said in an email. “The owner, Rachael Nam, is super sweet and would love to meet you. The place is called Egg Lush.”

Piasecki was right on. You couldn’t ask for a more welcoming, cheerful person than Nam — and the egg-focused breakfast sandwiches she’s whipping up are both delicious and uniquely her own.

The sandwiches feature fluffy scrambled eggs enclosed between thick slices of buttery, “slow-fermented” brioche bread, topped with House Spicy Mayo — a lightly fiery sauce that ties it all together.

When asked about her bread, Nam revealed just how particular she is about finding the perfect loaf.

“There’s actually a lot I could say about our bread,” she said. “We’ve already tried three different bakeries, and the one we’re using now is the best so far. But I’m still not 100% satisfied, so I’ve been reaching out to several bakeries in Denver to find something even better. I’d love a slightly denser texture and more consistent shape. Once I find the right one, I might even start selling our brioche here.”

To us, the bread already seemed perfect — but we’ll be keeping tabs on Nam’s ongoing quest for brioche perfection.

On our first visit, we tried the Classic sandwich with added avocado ($11.95) and the Bacon & Cheese Burrito ($11.95). We couldn’t resist adding a side of French fries with mozzarella cheese and smothered in house-made bulgogi ($10.95).

As expected, no complaints — the sandwich was spot-on, the burrito hearty and flavorful, and the ribeye bulgogi among the best we’ve tasted.

The small but appealing menu lets you customize sandwiches or burritos with Spam, avocado, bacon & cheese, ham & cheese, bulgogi or Salisbury steak. Sides include fries, tots and Egg Lush tots with scrambled eggs and extra options for bacon, ham, avocado, tomato, and cheese. Drinks range from coffee and sodas to juices, lemonades and matcha. Nam may eventually expand into espresso drinks.
